ONE-SKILLET DINNER
"This family favorite is a healthy version of Hamburger Helper, plus increased flavor! It is easy to prepare and a sure way to please even your pickiest eater."
1 pound ground turkey, sauteed
2 cups sliced carrots
1 pkg. (7oz) macaroni, cooked and drained
1 can diced tomatoes (28 oz)
1 cup chopped celery undrained
1 cup chopped green pepper
1 can tomato sauce (8ounces)
1 cup chopped onion
1 tsp. chili powder
1/4 tsp. pepper
Mix all ingredients together and bring to a boil. Cook on medium heat for 30 minutes. Add water if you need to thin mixture while cooking. Serves six.
SPINACH SALAD WITH APPLE
"An easy to prepare dish to complement your main dish. The unsweetened applesauce adds extra umph to the flavor, while the apples add crunch. Add chopped pecans for another flavorful sensation."
2 tblsps unsweetened applesauce
1 cup diced unpeeled apple
2 tblsps cider vinegar
1/4 cup chopped onion
1 tblsp vegetable oil
1/4 cup raisons
1/4 tsp sugar
2 cups torn fresh spinach*
2 cups torn romaine
Combine applesauce, vinegar, oil and sugar in a small bowl and mix well. Add the apple, onion and raisons and toss lightly to coat. Let mixture stand for ten minutes. Just before serving combine spinach and romaine in a large bowl, add apple mixture and toss. Serves six
*Spinach is a great source of iron.
CARROTS WITH LEMON AND BASIL
"This colorful side dish is not only pleasing to the eye, but the palate will be pleasantly surprised as well."
4 medium carrots, cut to 1 1/2"
1 tsp lemon juice
1 tbsp reduced fat margarine
1/4 tsp dried basil
Dash garlic powder
Dash pepper
Put the carrots in a small saucepan and cover with water. Cook until tender, about ten minutes. Drain. Add remaining ingredients and toss to coat.
STRAWBERRY CAKE DESSERT
"A perfect ending to a special meal, or wonderful as an afternoon treat. Strawberries are best when purchased fresh, but frozen berries hold up in this recipe nicely. I have substituted blackberries with great results!!
1 envelope unflavored gelatin
8 oz carton frozen light whipped
3/4 cup cold water topping, thawed
1/2 cup sugar
1 10 oz pkg frozen strawberries, thawed
5 cups angel food cake cubes
Fresh strawberries and mint
(optional)
In a saucepan, combine gelatin and cold water, let stand 5 minutes to soften. Stir over low heat just until gelatin to dissolve. Remove from heat and add sugar. Stir until sugar is dissolved. Stir in the undrained strawberries. Chill until partially thickened then fold in the whipped topping. Place cake cubes in a large mixing bowl and add strawberry mixture, combine gently. Pour into ungreased 8 inch baking dish. Chill until firm. Garnish with fresh strawberries and mint if desired. Makes 9 servings.
